Selection of plots based on our criteria of freshness or acidity and aromatic potential corresponding to the product to be produced.
The varieties and plots are vinified separately and cooled at low temperatures before draining, using only the free-run juice (40% yield). Natural cold settling, without the addition of clarifiers, precedes the controlled fermentation until it becomes a base wine.
After deciding on the final blend, bottling takes place in the early months of the year. This is followed by the second fermentation and aging in our cellars at a low and constant temperature.
Cava with a pale yellow color and golden tones. It exhibits aromas of fermentation and bakery, highlighting vanilla notes and a significant presence of fresh fruit. On the palate, it expresses a fine and persistent bubble, contributing great complexity thanks to its remarkable creaminess.
