The 23 is a happy prime number and so are the chromosomes inherited from each parent. For us it symbolizes the heritage of our winemakers. It is the first upper guard quarry of our eco-sustainable project.
Selection of Macabeo and Xarel·lo plots based on freshness and aromatic potential. Upon grape reception, they are cooled to a low temperature before pressing, to extract the maximum aromatic content from the flower must.
Natural cold settling, without the addition of clarifiers, precedes controlled fermentation until it becomes base wine. After blending the different wines, bottling is done in the early months of the year. The second
fermentation and aging take place in our cellars at a low and constant temperature.
Cava with a pale yellow color and golden tones. On the nose, there are aromas of fermentation and pastry, with highlights of white fruit notes. The palate entry is sweet, round, and pleasant, featuring a very balanced and elegant effervescence.
