About six months of ageing in French, American and Central European oak barrels.

Bobal of “La Muela” region. Garnacha of “La Vega” region. Syrah of “Pinarejo” region.

Manual harvesting.

Separate vinification for each of the grape varieties. Cold maceration during the first days without pumping overs. Alcoholic fermentation in stainless steel deposits. Once finished, we separate press quality from run off wine and it is naturally decanted to remove gross lees before starting malolactic fermentation. Six month ageing in barrels (first and second year oak barrels). Every varietal is aged in separate barrel.

We make the coupage of the different varieties attending to tasting, searching for the finesse and subtle notes of its profile. There is a smooth stabilisation before bottling, and then it rests in our cellar for further 6 months until we complete a perfect bouquet.

Cherry red with light violet shades. Intense berry aroma with a very integrated subtle wood aroma. We find an elegant wine in the palate, medium bodied and silky on the mouth. Balsamic notes, characteristic of the Bobal variety, are present in its finish.

Appetisers, cold cuts, paté, cheese, white meat, lamb, pok and blue fish. Perfect for barbecues.
